Founded in 2011 in Ipswich, MA by Andrew Cabot, the namesake and direct descendant of an American patriot, privateer, and rum-maker Andrew Cabot (1750-1791). New England’s North Atlantic Maritime climate lends a unique flavor profile to their spirits.
Privateer does not use sweetening, coloring, flavoring, or thickening agents.
Taste
Release PM-4
Made from 100% grade A single-origin molasses, distilled twice, and aged in new charred American Oak barrels. It can be classified as bottled-in-bond because it was distilled by a single distiller, a single distilling season, and at a single distillery. Matured for no less than 4 years, in a federally bonded warehouse and bottled at 100 proof.
Tasting notes include dried tobacco, dark chocolate, marzipan, and sugar cookies. There hasn’t been a bottled-in-bond rum released since the end of prohibition.
Holly’s Tasting Notes: Cinnamon & caramel. Almost does taste like an almond croissant. The palate is like a creamy caramel latte. Some mocha as well.
