Description
Alambique Serrano is an artisanal rum brand consisting of unique blends and single-cask selections of rums distilled from sugarcane juice in the cloud forest of Oaxaca, Mexico. Organic sugarcane hand-harvested at up to 3900 feet above sea level is processed with a mobile mill before natural fermentation and distillation. Aging takes place in a variety of vessels and environments, from French oak in a humid cave to glass demijohns in a dry bodega. All bottlings are cask strength.
This brand is 100 years in the making, the four Krassel brothers continue the work that their grandfather Max started in the 1930s after fleeing his home country of Germany at the start of WWI. With no knowledge of Spanish, Max began working any odd job that he could find. He eventually found himself in the mountainous Cañada region of northern Oaxaca, where he learned the ropes of distillation before setting out on his own to produce aguardiente using a still he designed and built himself.
More than a century since Max Krassel landed in Mexico, his grandsons Isidoro, Rommel, William, and Axel continue to carry on the family legacy of high-quality rum production full of passion, ingenuity, and dedication.
Taste
Cañamazo is a large, nitrogen-fixing tree that can grow up to 80 feet tall. Found in central and South America, this habitat-providing tree bears vibrant red sheaths that house onyx-colored seeds in the month of June. Alongside the Río Blanco, a mature Cañamazo shelters a small Alambique Serrano aging cave.
This single cask was fermented from 100% cane juice in pine tanks with ambient yeast. It was distilled by Rommel Krassel on a copper alembic pot still and aged for 2 years in new French Oak followed by 3 months in new Hungarian Oak. The angel’s share was 20%. No water, sugar, or coloring added.
