Holmes Cay (pronounced “key”) was co-founded by the husband/wife Eric Kaye and Maura Gedid. They curate a global collection of small-batch, limited-edition rums all over the world, and will even release rums from better-known distilleries that might not fit a particular profile. Founded in 2019 because they couldn’t find good sipping rums that interested them.
Taste
This single cask is from Foursquare Rum Distillery in Barbados. It is a mixture of column and pot distilled rum which was aged in a single ex-bourbon cask for 8 years in Barbados. It was then brought to NY and transferred to port casks for an additional year.
Tasting Notes from the brand: Plum and cherry lead the nose. Followed by light caramel, honey, and oak on the palate which leads to raisins, stone fruit, and a crisp finish.
