Barrell Craft Spirits, based in Louisville, Kentucky, is an independent blender and bottler of unique, aged, cask-strength sourced whiskey and rum, recognized for its blending expertise. They design, produce, and launch Spirits with a focus on what people want now and not what has been successful in the past. Stellum is another brand that they recently launched with various releases over the past two years.
Taste
Brand Tasting Notes: The nose is very warm, with rounded vanilla and butterscotch aromas initially, giving way to honeysuckle and ripened mango. The palate is bright cinnamon at first, leading into flamed orange peel, then savory, earthy notes of black plum and petrichor. Sweet and upbeat medium finish that tapers off gracefully.
This is the 2nd release of the Stellum Black Labels, which are specialty blends. This whiskey is a marriage of whiskeys from Indiana, Kentucky, and Tennessee. It includes three Indiana mash bills—two high-rye and one almost entirely corn—layered with reserve stocks of Kentucky and Tennessee bourbon.
