Blended Canadian Whiskey sourced, blended, finished, and bottled by Proof and Wood. 8-barrel blend of Canadian whiskey distilled in 2000 from a mash bill of 97% corn, 2.7% rye, and 0.3% malted barley. Aged 21 years then finished for 3 weeks in ex-American rye barrels.
Taste
Brand Tasting Notes: A nose of green spice with hints of honey and vanilla leads to an obliging palate of caramel, citrus, and dried fruit.
Holly’s Tasting Notes: The nose is nutty, creamy, and with lemon custard. Cookie crumbles and pie crust. The palate is brighter with citrus, grapefruit, and green grapes, zesty but still a creamy, candied sweetness. Really delicate yet rich dram.
