Since 1872 Ohishi Distillery has been utilizing the terroir and traditions of the remote village located in Kumamoto prefecture in Kyushu, Japan’s southernmost island. A quiet village of fewer than 3000 people, Mizukami’s farms grow the many strains of rice used in the production of Ohishi, 30% of which come directly from the Ohishi family farm.

Mochi, Hinohikari, Gohyakumangoku and Yamadanishiki are refined rice strains used in Ohishi whisky. The water is supplied by the Kuma River. The union of these varietals lends to an exceptional 18-day fermentation process that brings an elegant flavor and aroma to the finished product.

Taste

Aged 5–6 years in a combination of ex–Cognac and ex–Oloroso sherry casks, then finished in Kumamoto Sakura casks for at least 1–2 years.

– Distilled from a combination of estate-grown and locally sourced malted and unmalted rice
– An initial seven-day clay pot fermentation period is kickstarted with white koji seed
– A second fourteen-day parallel fermentation takes place in stainless steel

Brand Tasting Notes: The nose opens with a full-on candy apple bouquet bursting with caramel, green apple, and roasted peanut; the palate shows honey, cherry, pink peppercorn, and allspice with a confectionary finish of brown sugar, cacao, sea salt, and faint, burnt peanut.
