The brand Ikikko is produced at Ikinokura Distillery on the Iki Island, the largest island of a small archipelago situated to the north of Nagasaki and west of Fukuoka, Japan. It was established in 1984 after the merging of six smaller distilleries. Their primary focus is still shochu, but with the merger, they have well-matured stocks of koji rice whisky. The Iki island has a long, rich history of sake and shochu production,n and at the peak in 1899, there were 55 distilleries on the 53-square-mile island. Now there are 7 distilleries left.

Taste

Distilled from 2/3 unmalted barley and 1/3 white koji rice. White koji rice is fermented for 40 hours, followed by a 2-3 week parallel fermentation of barley and koji rice. Then it is distilled once in a pot still. Aged a minimum of 8 years in ex-Oloroso sherry casks.

Brand Tasting Notes: Aromas of caramel, sultana raisin, dried cherry, and dried mushroom transition to a warm, oak-driven palate highlighting marshmallow, toasted almond, apricot, and pink peppercorn with a sherry influence that speaks directly to its Oloroso-cask maturation.
