Filey Bay is the first single malt whisky made in Yorkshire. All single malt whisky made by the Spirit of Yorkshire Distillery will be called Filey Bay and pay tribute to their coastal location. They were initially mentored by the whisky legend, Dr. Jim Swan, and have continued to apply his respect to tradition when making their single malts.

All of their barley is grown in Hunmanby on their family farm. They also have two Forsyth Pot Stills and a column still. The stills were first fired up in May of 2016 and are now bottling and releasing whisky worldwide.

Taste

This release is finished in STR casks which are ex-Red Wine barriques that have been shaved, toasted, and recharred to soften the red wine tannins in the wood and stop it from overpowering the whisky. This process takes the citrus and caramel flavors from the bourbon casks that the whisky began in and weaves them with the red fruits of the Rioja barriques.

Holly’s Tasting Notes: Roses, rose hip jam, very floral with ripe red fruits. Some vanilla custard and almonds. The palate has more of a baked red fruit spice, some chai, and rich, stewed berries.
