Charles and I had never heard of Cardinal Bourbon before opening the shop. We found it in the portfolio of a lovely sales manager named Brenda. Their core offerings of whiskey were at natural cask strength so we were of course interested. Brenda was able to get a sample and we were impressed. Their Bourbon releases tend to get right to the point, with heavy notes of apples, nuts, caramel, and a palate explosion of spice.
We have been advocates for this brand ever since. I am also partial to the labeling as I love triangles. If there are any Alt-J fans out there, you will know the song Tessellate and that triangles are their favorite shape. We were then offered an opportunity to try a few exclusive single barrels for the shop so we called up Brenda, our friend Dan and walked through each one. We were all quite torn but Charles and I finally pulled the trigger on barrel #2994. We hope you enjoy this bourbon as much as we do!

Holly’s Tasting Notes: The nose is nutty, with toffee and peanut brittle. A sweet, creamy orange blossom honey with crisp green apples and a dash of lemon and citrus. The palate is spicy for higher corn! Candied ginger, cinnamon, oak spice, and more honey on the finish.
Charles’ Tasting Notes: The nose has ripe apple, custard, oak, raspberry, honey, and clove. The palate is bold with rich spice, viscous cinnamon, honey, and “tongue-tingling”. The finish is long with baking spice, oak, and orchard fruits.
