The Uncharted Whisky Company is an independent whisky bottler located in Fintry, Scotland, operated by Jack Breslin and Dana de Vos. They both came from the drinks industry and wanted to bottle their own whisky under this new brand. All of their releases are named after famous musicians, songs, and albums.
Taste
A marriage of 2 casks from an undisclosed Speyside Distillery (Mannochmore). One cask as finished in a Moscatel (dessert wine) cask for 2 years and the other was finished for 2 years in a Mezcal cask.
Brand Tasting Notes: On the nose, you have juicy melon and ripe peach leading the way, lifted by delicate rose petals and fresh pear, with a whisper of mezcal smoke tasting as if it might have been matured in an ex-peated cask. On the palate, the Moscatel introduces honey alongside dried fig, the waft of opening a kitchen spice cupboard, and more distinct warming cloves. All mellowing lovely into the earthy Mezcal cask. It is a long, opulent finish with gentle smoke, lingering sweetness, and a twist of orange rind. It’s a class act.
Holly’s Tasting Notes: Apples, honey, toasted cedar oak, smells like eating oranges inside a sauna after swimming in a hot tub. The palate has a lovely oak and earth sweetness. The earth and soot really shows up on the finish. Cooked pears and apples.
