The brand was founded in 2020 by Shane McCarthy, Liam Brogan & Donal McLynn. They also own an importer/distributor within Ireland and have extensive industry knowledge. The brand was inspired by the lost tradition of many bottlers and blenders throughout Ireland. They use a mixture of single grain, single malt, and pot still style whiskeys for their blends and typically bottle at natural cask strength. In 2022, in Northern Ireland, they opened Ireland’s only independent bottling and blending facilities.

Taste

This release has the following components:

80% grain whiskey matured in virgin oak and Bourbon casks

10% double distilled malt matured in Bourbon casks

8% pot still style whiskey matured in Oloroso Sherry butts

2% peated malt matured in Bourbon casks

Holly’s Tasting Notes: Roasted nuts, orange marmalade, milk chocolate, and smores. Muddy, earthy sweetness! Cocoa and some hazelnuts. The peat shows itself on the long, dark chocolate finish.
