Thompson Bros. is an independent bottling brand founded by brothers Phil and Simon Thompson. They got their start by establishing one of Scotland’s top whisky bars at the Dornoch Hotel in the highlands of Scotland, north of Inverness. They also crowdfunded to start their own distillery at the Dornoch Castle Hotel as well and began distilling in 2017.

This is their first debut in the United States with the SRV5 Blended Malt and TB/BSW Blended Scotch. There was a trademark issue here in the US regarding the “Thompson Bros” name so they changed it for our market, calling it “Redacted Bros”.

 

Taste

Matured in 1st fill barrels and refill hogsheads | Named “SRV5” because the spirit rested in Vat 5 on Station Road. | The blend is mostly Clynelish & Caol Ila.

The goal of this blend was the create a core blended malt Scotch Whisky that “whisky geeks” would want to enjoy. It is bright and full of texture. Non-chill-filtered or added color.

Brand Tasting Notes: On the nose has galia melon, lemongrass, apricot, cucumber, waxed lemons, green peppercorns & capers in brine, green apples, lime cordial, grapefruit bitters, green peppers, coastal peat and beach bonfires. The palate has greengage, cantaloupe melon, banana smoothie, lemon oil, grapefruit juice, capers, lemongrass, thyme, 1st press olive oil, candlewax, and gentle smoke. The finish has lemon balm, thyme, camphor, earthy peat, and a gentle smoke with a long coating of waxiness.
