In early 2022, we were one of the first shops in the country to bring in Stauning’s rye and single malts. We then had a fantastic seminar with one of the distillery founders, Alex in February. Since then we have been massive fans of this brand and now we are one of the first in the country to bring in our own store-pick single barrel! We tasted through malts and ryes and this tequila finish was the clear star although it was a tough choice.

A bit about Stauning.

In 2005, in a small town on the West Coast of Denmark, nine friends (a doctor, a chef, a butcher, a teacher, a helicopter pilot, and four engineers), began a distillery. It was humble beginnings with two small pot stills set up in an old butchery. They didn’t know much about making whisky but they knew that they had the land around them: The wind, the sea, the fields, the heather, and the peat. And some of Denmark’s finest water.

Stauning uses 100% local barley and rye and it is all floor malted in-house. They also continue to direct-fire their pot stills which is quite uncommon these days. There are now 24 stills in total. When they have peated expressions, they are using local Danish peat and heather to burn in the kilns when drying their barley.

Distilled in March 2018 and bottled in September 2022

This rye whiskey was first matured in a Virgin American Oak Barrel and then finished in a Tequila Barrel.

First Fill Tasting Notes: Roasted nuts, dried fruits and figs, orange smoothie, mesquite, and strawberries. The palate is bright with toffee, caramel, strawberry Laffy Taffy, and a wisp of mesquite smoke.
