Melbourne Australia is known to have “four seasons in a day” with extreme temperature swings. David Vitale, the founder of Starward knew that this would make it an ideal place to mature whisky. They are located at the Docklands of Melbourne and were founded in 2016. They capitalize on being near Australian Wine Country and primarily use Australian Red Wines and Australian Fortified Wine barrels for their maturation. They also use Australian Barley for their single malt production.

Taste

The barrels used for this Solera previously held Australian Apera, basically Sherry but they can’t call it Sherry. Solera is a traditional method the Spanish used to age their Sherry and keep it consistent. A fractional amount of each young cask is blended with a more mature spirit. It’s the inspiration for making our Solera. And it means there’s still a touch of our first-ever cask in every bottle made today.

Brand Tasting Notes: Bright tropical and orchard fruits, caramel, and vanilla. The palate has toasty caramel and creme brûlée, banana, figs, and sweet spice. The finish is juicy and full with a lingering dry spice.

Holly’s Tasting Notes: Banana Cream Pie with a cookie crumble crust with almost overripe apples and apple juice. The palate is silky with hazelnut, nuts, and cinnamon crumble.
