Melbourne Australia is known to have “four seasons in a day” with extreme temperature swings. David Vitale, the founder of Starward knew that this would make it an ideal place to mature whisky. They are located at the Docklands of Melbourne and were founded in 2016. They capitalize on being near Australian Wine Country and primarily use Australian Red Wines and Australian Fortified Wine barrels for their maturation. They also use Australian Barley for their single malt production.

Taste

Uniquely Australian and a world-first, Starward Nova is crafted exclusively with Australian wine barrels for maturation. These wine barrels include a variety of shiraz, cabernets, and pinot noirs. Elementally matured in Australian red wine casks inherited from pioneering Australian wineries, the barrels are steamed, not charred, to retain the penetration of wine into the wood. Nova is a homage to the Australian wine pioneers who paved the way for all premium Australian drinks that have followed.

Brand Tasting Notes: The nose has bright flavors of red berries and orchard fruit, coated in soft oak spice. The palate has rich red berry pudding covered in vanilla, caramel, and spice. The finish is sweet, balanced and long.
