Taste

Distilled June 2011, Bottled 2025 | Cask 161609

Finished in 1st Fill STR Pedro Ximenez Barrique for 3 years

Brand Tasting Notes: The nose opens on rich notes of tiramisu and toffee apples the experience quickly becomes more woodsy (fir branches and pine needles) and earthy (freshly dug earth and warm potting soil in a greenhouse) before delving into freshly roasted coffee beans and red wine tannins. The palate is mouthcoating and chewy with dried cherries, dates, shaved dark chocolate, espresso beans, and freshly cracked black pepper (really, it’s cacio e pepe) with a pleasing saltiness. The finish is long and drying with lingering pepper, salt, and dark fruits.
