Description

Signatory is an independent bottler based out of Edradour Distillery which they own as well in Pitlochry, Perthshire. Their whiskies are bottled across a number of ranges, including the Un-chill Filtered Collection, the Cask Strength Collection, and the Single Grain Collection. Their “perfume bottles” have become iconic for their stature and quality.

Signatory bottling, bonding, and office facilities are located in a building adjacent to Edradour distillery, near Pitlochry in Perthshire, which the company also owns.

Taste

This is a Speyside distillery that is still using worm-tub condensers. This means less copper contact during the distillation process leaving some “heavier” qualities within the whisky. A lot of fruit but some funk in there too!

Holly’s Tasting Notes: White peach tea, banana nut bread, and a little bit of key lime pie. The palate has more bananas and citrus, charred oranges, and figs. Pepper and a rich burnt spice. A long finish. It’s got that nice Mortlach funk in there!
