Shady Knoll Orchard and Distillery is located in the Hudson Valley in Millbrook, New York. They are family-owned and operated by the Kneipper-Richards family. They grow their own apples and rye to make their rye whiskies and apple branies. Their apple brandies combine over 100 varieties of apples! All whiskey production is done on-site and distilled in French Alembic Pot Stills.
Taste
Mashbill of 70% rye, 15% corn, and 15% malted barley | Matured in New Charred American Oak and then finished in Port Barrels
Holly’s Tasting Notes: Plums, citrus zest, oranges, a dash of cinnamon chai, and dark chocolate. The palate shows more peppery rye spice but with a lovely toasted rye bread note, plums, prunes, and a nice silky texture.
