Founded in 2011 in Ipswich, MA by Andrew Cabot, the namesake and direct descendant of an American patriot, privateer, and rum-maker Andrew Cabot (1750-1791). New England’s North Atlantic Maritime climate lends a unique flavor profile to their spirits.
Privateer does not use sweetening, coloring, flavoring, or thickening agents.

Taste

A collaboration single barrel with Privateer’s distributor, PM Spirits. This single cask of New England Rum was distilled in the winter of 2016 and aged for over 6 years in 53-gallon new American oak barrels. Bottled in the spring of 2023, it is a Queen’s Share distillate, produced using the traditional cognac technique of redistilling the transitional cut between the rich hearts and bitter tails of distillation.

Holly’s Tasting Notes: Warm, roasted hazelnuts and almonds, Nutella, and mint chocolate chip ice cream. The palate has more baking spices with oak spice and peppermint. A nice viscous mouthfeel as well.
