Nicolas Palazzi – founder and fearless leader of PM Spirits – was raised in Bordeaux, France, and spent a lot of time in the Cognac region. There, he met two people who became instrumental in his understanding of Cognac and in establishing his network in the region: one was a good friend of his grandfather and a highly-respected “bouilleur de cru”, or grower-distiller, who gave him his first hands-on approach to working in a cognac cellar.

The other, master cooper Jean-Noel Pelletan, shared his encyclopedic knowledge of ancient techniques and his deep understanding of wood and the role it plays in aging. These men introduced Palazzi to dozens of people throughout the region – distillers, bottlers, negociants, and more. Over the years, several casks and demi-johns of Cognac were acquired from this diverse mix of characters. This became the start of a cellar located in the heart of Charente, which became the foundation for the original incarnation of PM Spirits: an independent bottler of rare Cognacs.

Taste

A blend of Cognacs distilled between 1925 and 1965 all matured in one single cask.

Holly’s Tasting Notes: WOW. Warm nuts, nougat, milk chocolate, and warm spices. A dash of bubblegum as well. The palate is bright with spicy, warm fruit. The finish lingers forever. What a treat.
