Holyrood is the first operational whisky distillery in central Edinburgh since 1925. It sits on the edge of Holyrood Park and is housed inside a former railway shed dating back to 1831. Founded by Canadian Rob Carpenter who is also the founder of the Canadian branch of the Scotch Malt Whisky Society, he first had the idea for an Edinburgh distillery in 2013. He and his wife Kelly along with co-founder David Robertson made the dream become a reality in 2019. Holyrood was created with the intent of proving that there is a different way of producing single malt whisky and focuses on exploring new recipes using heritage malts, specialty malts, and different yeasts.

– Made out of 56% heavily peated malt, 41% distilling malt, and 3% chocolate malt

– Made with a variety of yeast strains

– Matured in primarily first-fill Bourbon barrels along with a small amount of peated Islay quarter casks and new American Oak

Brand Tasting Notes: The nose has lemon zest, horse chestnut pith, hints of peppermint, light hickory, and smoke. The palate has wafer biscuit, dark chocolate mousse, and notes of earthy highland peat smoke followed by lightly stewed pears and a clean finish.

Holly’s Tasting Notes: Laffy taffy, orange soda, white chocolate with almonds. A lovely sweet, lemon-lime vanilla ream popsicle with peat smoke on the side.
