Many distilleries have multiple origin stories because a lot of illicit distilling was going on back in the 1700 and 1800s and you better believe that was happening on a remote island in the North Sea like the Orkney Islands! The distillery is said to be founded by a priest turned smuggler and/or a farmer in 1798. It sits just outside of the main town of Kirkwall. The wind is so strong on these islands that the peat bogs here are filled with more coastal brush and heather, no trees. They still do some of their own floor maltings and have a lightly peated style of whisky.

Taste

This third release has been created using a combination of three cask types – first-fill sherry seasoned American and European oak casks and a smaller quantity of refill casks for balance and depth. Using a higher proportion of Orkney peated malt, their Master Whisky Maker, Gordon Motion, has achieved an intensely smoky character, coming through first on the nose with aromas of smoldering peat and lightly charred oak, balanced by honey-glazed lemons and crushed aniseed.
