Description

Many distilleries have multiple origin stories because a lot of illicit distilling was going on back in the 1700 and 1800s and you better believe that was happening on a remote island in the North Sea like the Orkney Islands! The distillery is said to be founded by a priest turned smuggler and/or a farmer in 1798. It sits just outside of the main town of Kirkwall. The wind is so strong on these islands that the peat bogs here are filled with more coastal brush and heather, no trees. They still do some of their own floor maltings and have a lightly peated style of whisky.

Taste

This is the 2nd release of the Highland Park Cask Strength Series. Predominantly matured in sherry casks both American and European Oak and a small percentage matured in ex-bourbon casks. All were hand-selected by Gordon Motion, their Master Whisky Maker.
Notes of complex and light smoke on the nose with aromas of summer rose, ripe pear, and fresh coconut gathering on a wave of aromatic peat. A hint of cedarwood in the background. A sweet and spicy harmony of flavors follows with poached pear and rich almond cake, a drizzle of cloudy honey, and a twist of salty licorice. A finish of orchard fruits, black pepper, and sweet aniseed lingers.
