Description

Hakata Whisky is distilled and matured in Fukuoka, Japan by the Hikari Distillery (which was founded in 1912). Their whisky is made out of 100% malted barley, and a fraction of this has been fermented with Koji. This is an iconic Japanese process. Koji provides additional healthy enzymes for fermentation, typically used in addition to yeast, and creates that highly sought-after “Umami” taste.

Most releases are matured in Sherry casks and kept in traditional-style warehouses, as well as a few open-air warehouses, where they are exposed to humid summertime temperatures of 95 °F and winter temperatures of around 38 °F.

Taste

Brand Tasting Notes: The nose has champagne, dried plums, and sweet dates. The palate has stewed fruit, caramelized orchard fruit, and apple cider with Sherry. The finish is sweet with a citrus quench. Playful and asks for a second sip.

Holly’s Tasting Notes: Rich cherry pie and fried dough. The palate has some nice baking spice, more creamy cherry syrup right from the pie, some chocolate, and a dash of bubblegum. Very creamy .
