Hakata Whisky is distilled and matured in Fukuoka, Japan by the Hikari Distillery (which was founded in 1912). Their whisky is made out of 100% malted barley, and a fraction of this has been fermented with Koji. This is an iconic Japanese process. Koji provides additional healthy enzymes for fermentation, typically used in addition to yeast, and creates that highly sought-after “Umami” taste.

Most releases are matured in Sherry casks and kept in traditional-style warehouses, as well as a few open-air warehouses, where they are exposed to humid summertime temperatures of 95 °F and winter temperatures of around 38 °F.

Taste

Brand Tasting Notes: The nose has lemon meringue and strawberry preserves, old oak, and is earthy. The palate has rich Sherry, walnuts, sweet raspberries. The finish has vanilla oak, more Sherry, raisin, and orange peel. The finish is incredibly long.

Holly’s Tasting Notes: Werther’s Caramel and Chocolate candies, rich frothy mocha, some cherry cough syrup (not in a bad way, in a rich, thick texture way). The palate has more Luxardo cherry syrup, creamy milk chocolate, chocolate pudding, and more red fruits.
