The Doc Swinson’s Collection began with an extremely small cache of Bourbon Barrels. It has since grown into a unique and on occasion extremely rare, collection of American whiskies. Each whiskey brought in is personally tasted by the four founders of Doc Swinson’s. They have become known for their finishing casks on American whiskey. When it comes to finishing techniques, they look to the old-world traditions that have stood the test of time, from Scottish whiskey blenders to the timeless sherry pyramids of the Spanish solera. Their whiskey is sourced but finished, proofed, and bottled in Washington State.

Taste

For this Alter Ego Triple Cask Bourbon release, they wanted to see how they could enhance their Bourbon blend as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, they found a sweet spot using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers.

Their classic Bourbon is finished in these PX, Sherry, and Cognac casks and then re-blended and married in ex-Cognac Foeders prior to bottling. They claim that their finishing and blending techniques impart a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.

Holly’s Tasting Notes:  Clay, nuts, and plums followed by chocolate-covered almonds. The palate has a sticky syrup and pancake crumble, think sticky nuts off the NYC streets along with cinnamon sticks.
