USA EXCLUSIVE RELEASE OLOROSO FINISH 342 BOTTLES
Initially matured in ex-bourbon barrel before being finished in an outstanding single oloroso cask.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, we bottle our whisky onsite at our distillery.

Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.

Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.
Holly’s Tasting Notes:
Olives, buttercream, clove, cedar, and apples. The palate is bright and creamy with more apples, candied caramel chews, burnt orange candies, and spice on the finish. With some time and water, there is more of a cinnamon-covered raisin vibe along with more stone fruit on the nose: apples and pears. The finish is grassier and chocolaty malt. Toasted coconut.
