2XO, Two Times Oak, is a whiskey brand from blender Dixon Dedman. Dedman also founded the brand Kentucky Owl which was recently sold to Stoli Group and he left the brand in 2021. He grew up on the whiskey trail infusing the learnings from industry legends with his culinary expertise from running his family’s business, the famed and James Beard award-winning Beaumont Inn. “2XO” is a blending process Dixon pioneered, where he re-barrels his hand-selected aged whiskey into new charred oak barrels to create a unique combination of intense flavors, character, and complexity with each blend. Dixon’s vision is to revolutionize the category, a shift away from the overplayed nostalgic American whiskey storyline, and create an innovative Brand backed by the incredible liquid in the bottle.
The 2XO brand will consist of a series of limited-time small batch offerings (Icon Series), a series of single barrel releases (Gem of Kentucky Series), and an everyday blend offering (Oak Series).
Taste
The Kiawah Blend is the fourth small batch blend in the Brand’s Icon Series, a series of one-off small batch releases. The Kiawah Blend is a nod to Dixon’s happy place where he goes with family and friends to relax, unwind, and recharge. This blend uses two Bourbon mashbills: one is a high-rye bourbon, with 35% rye, while the other has 18% rye. After aging for an undisclosed amount of time, the high-rye bourbon is then transferred into new charred oak barrels with #3 and #4 char levels for up to a year and makes up 60% of the final blend. The other mashbill doesn’t undergo any finish.
Brand Tasting Notes: The Kiawah Blend’s mouthfeel is viscous and rich, moving from initial sweetness on the front of the palate, to more savory notes on the mid-palate, and finishing with a lingering peppery spice.
