Description

The name Tri Carragh is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. They are a young independent bottler based in Edinburgh under the parent company name of Stravaig Spirits. The founders are Ryan McCafferty and Ola Lopatowska. They also own the brand Glenlaird Scotch Whisky and help others source and bottle their own casks of whisky.

Taste

Located in the Lowlands, Dalrymple is celebrated for its approachability and refinement, producing whiskies that are lighter on the palate while still offering depth and complexity.  This whisky comes from the malt distillery Ailsa Bay located within Girvan Grain Distillery, owned by William Grant & Sons.

Finished in a 1st Fill Oloroso Sherry Hogshead

Brand Tasting Notes: The nose has a rich and “thick” aroma of dark maple syrup, treacle, and dark berries that immediately fills the senses. Wood spices, cinnamon, cloves, and a hint of dark chocolate add depth and warmth. The palate is dominated by dark fruits and berries, with blackberries, red currants, raisins, and plums coating the palate. Hints of toffee, chocolate, and cinnamon create a well-rounded, lingering finish.

Holly’s Tasting Notes: Dark chocolate hot cocoa, plums, and prunes. Blueberry and chocolate chip pancakes with syrup over the top. The palate has a lot of rich baking spice, lemon and raspberry scones, and sweet chocolate-covered lemons on the finish (if that is a thing, I’m not sure). It is creamy but bright at the same time.
